Foodie Feature // doitforapancake on instagram

Today's foodie feature showcases one of my favourite foodies on instagram, @doitforapancake. This healthy food enthusiast from Poland has to die for pictures and quite literally takes banana nice cream to a whole new level. I sent Agata- the face behind the amazing food pictures- a couple of questions and here's what she had to say!

What was your main push/motivation to adapt a healthy approach to eating?
Well, my journey began two years ago, when I weighted 68kgs (in the age of 13!) and decided to change my life, I just hated the way my body looked. Making long story short: I lost 20kgs in the course of four months but I felt that my diet is still not as good as it should be. All this stuff started interest me and I wanted to be as healthy as I can. Now I do it because I like it. I like having clear skin, I like having toned body and I like being able to do more than others.

What is your go to meal/food?
I don't have many good ideas for go to meals, in the mornings I don't think about having something super-delicious at school, I just grab a fruit and wholewheat sandwich with avocado or other toppings. Sometimes I take raw or baked treats with me when I do them a day before.

Who is your ultimate foodie inspiration?
All the people on instagram. Of course I have some favourites but they are all so inspiring! For example - Lin from @tumblinbumblincrumblincookie blog, Tilda from @flourishinghealth, Meghan from @naturallymeghan or my good friend - Sarah from @holy_cacao! Their recipes are just so good that I always want my own ones to be better!

What advice would you give to someone who is wanting to adapt a healthier lifestyle?
The best advice? Never give up. I know, you have many doubts when you see no results of your healthy eating and exercising. But remember that it's a long process and all you need is a little patience. Think positive, don't look back, love your body no matter what and be patient.

Share one of your favourite recipes-
I want to give you one of my all-time favourite recipe of mine for VEGAN PANCAKES (yup, do it for a pancake)!

Chocolate batter:
30g buckwheat flour
10g raw cacao
1/2 tsp baking powder
1 chia egg (1 tbsp chia seeds + 3 tbsp water left in the fridge for 10 minutes to thicken)
A few splashes of vegan milk
10g agave/date/maple syrup

Blueberry batter:
30g buckwheat flour
10g date syrup
1 chia egg
1/2 tsp baking powder
A few splashes of vegan milk

Mix ingredients for both flavours in separate bowls, be careful when you stir blueberries in, make sure you don't break them. Preheat your pan to medium heat with some coconut oil. Then cook like normal pancakes (1 heaping spoon of batter = one pancake) and stack them up, layering both flavours. For raw chocolate sauce simply mix some vegan milk with half a mashed banana and one tbsp raw cacao. Enjoy!
