Cinnamon to taste
Defrosted or fresh berries
In a blender, add the banana, cinnamon and eggs and mix until well incorporated.
In a frying pan, add a little coconut oil and spread using a paper towel and heat.
Once heated, turn the heat down to about half and using a table spoon, spoon a small circle of the pancake mixture into your pan.
When the mixture around the edges seems slightly cooked, flip over and cook until you can shuffle the pan and the pancake moves around or until golden on both sides.
Repeat this until you use all of the mixture.
Top with more cinnamon and berries.
