Healthy Pancakes

I made these lovely little healthy beauties on Sunday and I have been craving them every morning since. These are completely natural and healthy and has sweetness and fabulous texture. Defiantly not a breakfast if you're in a rush, but if you do have some time on your hands these would be a great alternative to the regular muesli and yoghurt. This recipe is taken from one of my favourite people, Cassey Ho, well known for her youtube channel Blogilates.


Ingredients
1 banana
2 eggs
Cinnamon to taste
Defrosted or fresh berries 
Coconut oil

In a blender, add the banana, cinnamon and eggs and mix until well incorporated.
 In a frying pan, add a little coconut oil and spread using a paper towel and heat.
Once heated, turn the heat down to about half and using a table spoon, spoon a small circle of the pancake mixture into your pan.
When the mixture around the edges seems slightly cooked, flip over and cook until you can shuffle the pan and the pancake moves around or until golden on both sides.
Repeat this until you use all of the mixture.
Top with more cinnamon and berries.
