Banana & Raisin Baked Oats

My general rule for the weekends is that I have to make myself breakfasts that are a little bit more interesting than my usual cereal or toast that I have when I'm in a rush throughout the school week. This weekend I attempted a twist on my beloved oats; rather than cooking them on the stove top I decided to try baked oats. Baked oats is something that I've seen floating around instagram but it's always been one of those things that I've never really got around to trying. Probably due to the fact that I didn't actually own anything to make it in until I went out to Briscoes especially to buy a little oven proof dish to bake my oats in (note- make sure you have a little oven proof dish before you attempt this recipe) The beauty of oats is that you can really do a lot with them, vary the flavours to your liking and make them as exciting or as bland as you please. These oats are crispy on the outside, but have a lovely gooey and warm texture once you get into it. This recipe was taken from @happyhealthyfree_  on instagram.



1/3 cup rolled oats
1/3 cup vanilla soy milk (or any milk)
1/2 mashed banana + some slices to decorate
Handful of raisins + some to decorate
1/4 tsp baking soda
1/2 tsp baking powder

Preheat the oven to 180c.
Add the oats and milk to baking dish and leave to soak while you mash the banana in a separate bowl. 
Add the mashed banana, baking power, baking soda and raisins to the oats and milk. Mix well.
Add the remaining banana and raisins to the top how you please.
Bake for about 10 minutes or until the top of the oats are golden.
